Primo was the first Sicilian extra virgin olive oil to obtain the DOP Monti Iblei controlled designation of origin certification. Today, it is one of the most sought-after and prized. Because in the kitchen, more than a condiment, it can be considered a true food: it is an intense, robust, and very fragrant oil, suitable for hearty first courses, meats, and legumes. It enhances grilled fish, soups and salads, bruschetta and caprese. And with its intensity, it is capable of defining the destiny of every dish.

Origin
Produced in Italy. Primo DOP is produced in the Monti Iblei, at an altitude of 350-450 meters above sea level, from centuries-old DOP certified olive groves facing south. Predominantly Tonda Iblea variety.
Harvest
Hand picking. From September 15th to October 30th.
Extraction
Exclusively mechanical, in a state-of-the-art mill with 4.0 continuous cycle technology, two-phase extraction, without added water and at a controlled "cold" temperature (below 27 degrees)
Appearance
Bright green.
Aroma
Intensely fruity with pronounced notes of green tomato, freshly cut grass, and fresh aromatic herbs.
Taste / Flavor
Full-bodied and intense, with present and balanced bitterness and spiciness, flavor of green tomato and fresh herbs.
Use
Grilled meat and fish, soups and salads, bruschetta or caprese, raw on grilled vegetables.
